Most protein pancake recipes either taste like chalk or need a specialty mix. This one is built from what's already in the kitchen: blended oats instead of flour, a ripe banana for sweetness, eggs for structure — and just half a scoop of whey, which is the amount that adds protein without making them dry.

Ingredients

1 big plate (6 small pancakes)

  • ½ cup rolled oats (40 g)
  • 1 medium ripe banana (118 g) — the spottier, the sweeter
  • 2 large eggs
  • ½ scoop vanilla or unflavored whey (15 g)
  • ½ tsp cinnamon, a pinch of salt
  • ¼ cup plain Greek yogurt, to serve (60 g)
  • ½ cup raspberries, to serve (60 g)

How to make it

  1. 1

Blend the oats into a fine flour, about 20 seconds.

  2. 2

Add the banana, eggs, whey, cinnamon and salt. Blend until smooth.

  3. 3

Let the batter rest for 5 minutes — the oats drink up the liquid and the pancakes get thicker.

  4. 4

Heat a non-stick pan over medium-low and wipe it with a drop of oil.

  5. 5

Pour about 3 tablespoons per pancake. Flip when bubbles pop on top and the edges look set, about 2 minutes; cook 1 more minute.

  6. 6

Stack, top with the yogurt and raspberries, and eat warm.

Kitchen notes

  • Keep the heat at medium-low: whey browns fast, and high heat gives you burnt outsides and raw middles.
  • No protein powder? Use 3 egg whites instead — a little less protein, same fluffy texture.
  • Make a double batch on Sunday, freeze the pancakes between parchment squares and reheat in the toaster on weekdays.
  • A frozen banana works too: thaw it for 30 seconds in the microwave first.
